  • 1 lb asparagus, trimmed
  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • Salt & black pepper, to taste
  • Lemon slices, for topping
  • Fresh parsley, chopped
  • Foil sheets For wrapping the salmon and asparagus.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix the melted butter, minced garlic, lemon juice, salt, and pepper together.
  • Lay out the foil sheets and place the asparagus in the center. Put the salmon fillets on top of the asparagus.
  • Drizzle the butter mixture over the salmon and asparagus. Add lemon slices on top.
  • Fold the foil tightly to create sealed packs.

Cooking

  • Bake in the preheated oven for 15–18 minutes or until the salmon flakes easily with a fork.
  • Carefully open the foil packs, garnish with chopped parsley, and serve hot.

Notes

Make sure to seal the foil packs tightly to keep all the juices in during baking. You can substitute or add other vegetables like bell peppers or zucchini if you like. Adjust the amount of garlic and lemon juice based on your taste preferences.
