  • 4 pieces salmon fillets Choose fresh salmon fillets for the best flavor.
  • 1 bunch asparagus, trimmed
  • 4 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 lemon lemon, juiced Don’t skip on the lemon juice; it adds brightness to the dish.
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • Lay out a large piece of aluminum foil.
  • Place salmon fillets and asparagus in the center of the foil.
  • In a small bowl, mix melted butter, minced garlic, lemon juice, salt, and pepper.
  • Pour the garlic butter mixture over the salmon and asparagus.
  • Fold the foil over to create a sealed packet.
  • Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serving

  • Carefully open the foil pack and serve warm, either directly in the foil or on plates.
  • You can serve the dish with a side of rice or a light salad and garnish with extra lemon slices or fresh herbs.

Notes

If you have leftovers, let the salmon cool down before transferring it to an airtight container. Store the leftovers in the refrigerator for up to 2 days. You can reheat them in the microwave or in a skillet. Feel free to add other vegetables like bell peppers or zucchini for more variety. You can customize your foil packs by adding different herbs such as dill or parsley.
