  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 piece Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Mashed potatoes for serving
  • Roasted asparagus for serving

Preparation

  • In a slow cooker, heat the olive oil and add the chicken breasts. Season with salt and pepper.
  • In a separate bowl, mix together garlic, butter, chicken broth, lemon juice, and lemon zest. Pour over the chicken.

Cooking

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is cooked through.

Serving

  • Serve over creamy mashed potatoes and alongside roasted asparagus.
  • Garnish with fresh parsley before serving.

Notes

For added flavor, let the chicken marinate in the lemon juice and garlic mixture for a few hours before cooking. Feel free to use boneless, skinless thighs for a different taste. Adjust the lemon juice according to your taste preference. Consider adding vegetables directly to the slow cooker for a complete meal.
