Ingredients
  

For the Chicken

  • 1 tbsp zest of 1 lemon Adds freshness.

For the Coconut Rice

  • 1 cup jasmine or basmati rice Comforting base that soaks up juices.
  • 1 cup coconut milk Adds creaminess.
  • 1/2 cup water Helps cook the rice perfectly.
  • 1/2 tsp salt Seasoning for rice.

For the Pineapple Mango Salsa

  • 1/2 cup diced pineapple Brings sweetness and brightness.
  • 1/2 cup diced mango Juicy and delicious.
  • 1/4 cup diced red onion Adds crunch and kick.
  • 1 tbsp lime juice Adds a tangy twist.

For the Spicy Mayo

  • 1/4 cup mayonnaise Base for creamy sauce.

Instructions
 

Prepare the Coconut Rice

  • Rinse 1 cup of jasmine or basmati rice under cold water until it runs clear.
  • Combine the rinsed rice with 1 cup of coconut milk, 1/2 cup of water, and 1/2 tsp salt in a saucepan.
  • Bring to a boil, then reduce the heat to low and cover. Simmer for about 15 minutes until the rice is tender and the liquid is absorbed.

Make the Lemon Ginger Glaze

  • In a small bowl, mix together 1 tbsp of grated ginger, zest of 1 lemon, 1/4 cup of lemon juice, 2 tbsp of honey, and 1 tbsp of soy sauce.
  • Set this glaze aside.

Cook the Chicken

  • Heat 1 tbsp of olive oil in a large skillet over medium heat.
  • Season chicken pieces with salt and pepper and add to the skillet.
  • Cook for about 4-5 minutes until golden brown and cooked through.

Add the Glaze

  • Pour the lemon ginger glaze over the chicken, stirring occasionally.
  • Cook for another 2-3 minutes until the glaze thickens and coats the chicken.

Prepare the Pineapple Mango Salsa

  • In a medium bowl, combine 1/2 cup of diced pineapple, 1/2 cup of diced mango, 1/4 cup of diced red onion, and 1 tbsp of lime juice.
  • If desired, add chopped fresh cilantro and toss gently to mix.

Make the Spicy Mayo

  • In a small bowl, whisk together 1/4 cup of mayonnaise, 1-2 tsp sriracha, and 1 tsp lime juice until smooth.

Assemble Your Bowl

  • Start with a scoop of coconut rice, top with lemon ginger chicken, and add a generous helping of pineapple mango salsa.
  • Drizzle with spicy mayo and garnish with remaining fresh cilantro.

Notes

For extra juicy chicken, marinate in glaze for a few hours before cooking. This dish holds up beautifully for leftovers.
