Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a muffin tin with paper liners.
  • In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  • In another bowl, mix the wet ingredients: sour cream, lemon juice, lemon zest, egg, and vegetable oil. Whisk until smooth.
  • Gently pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  • Fold in the poppy seeds.
  • Fill each muffin cup about two-thirds of the way full.

Baking

  • Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature ingredients for better mixing. Don't overmix the batter to avoid dense muffins. You can store leftovers in an airtight container for up to 2 days or freeze them.
