  • Water to cover water to cover the lemons Make sure you have enough water to submerge the lemon slices completely.

Preparation

  • Grab a medium-sized glass jar and sterilize it by boiling for a few minutes or washing it thoroughly with hot, soapy water.
  • Layer lemon slices in the jar and sprinkle salt over the top. Repeat until the jar is nearly full, leaving about an inch of space at the top.
  • Pour in enough water to cover all the lemon slices completely and stir gently to release any air bubbles, then seal the jar tightly with a lid.

Fermentation

  • Store the jar at room temperature for about 3 to 4 weeks, shaking gently every couple of days to redistribute the salt.
  • After 3 to 4 weeks, transfer the jar to the refrigerator to halt the fermentation process.

Notes

Choose quality lemons for the best results and consider adding spices like coriander seeds or peppercorns for additional flavor. Patience is key; the longer the lemons sit, the more intense the flavor.
