Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the russet potatoes thoroughly.
  • Poke several holes in each potato using a fork.
  • Rub the potatoes with olive oil, salt, and pepper.

Baking

  • Place the potatoes directly on the oven rack.
  • Bake for about 45-60 minutes until incredibly tender inside.
  • Remove the potatoes from the oven and let them cool slightly.

Assembly

  • Slice the tops open lengthwise and fluff up the insides with a fork.
  • Top each potato with crumbled bacon, chopped broccoli, and sour cream.
  • Sprinkle a mix of shredded cheddar and Monterey Jack cheese on top.
  • Return to the oven for an additional 5-10 minutes to melt the cheese.
  • Garnish with sliced green onions.

Notes

For extra crispy skin, bake the potatoes uncovered and consider seasoning with garlic powder or onion powder. Store any leftovers in an airtight container in the fridge.
