  • 1 cup Monterey Jack cheese, shredded Contributes a wonderful meltiness.
  • 6 slices bacon, cooked and crumbled Brings smoky depth.
  • 2 tbsp chives, chopped Adds freshness and color.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Steam the cauliflower until tender but still holding its shape.
  • In a large bowl, combine the steamed cauliflower, softened cream cheese, and sour cream. Mix gently until fully incorporated.
  • Fold in half of the shredded sharp cheddar and Monterey Jack cheeses.
  • Add the crumbled bacon and chopped chives, mixing until evenly distributed.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a lightly greased casserole dish and spread it evenly.
  • Top with the remaining sharp cheddar and Monterey Jack cheese.
  • Bake in the preheated oven for 25-30 minutes until bubbly and golden.
  • Let sit for a few minutes before serving.

Notes

For a crispy top, broil the casserole for the last few minutes of cooking. Store leftovers in an airtight container and reheat gently in the oven.
