  • 1 pound Pork sausage Use spicy or mild according to preference.
  • 1 medium Sweet onion Adds sweetness and depth.
  • 1 medium Red bell pepper Provides color and crunch.
  • 6 large Eggs Bind the ingredients together.
  • 2 cups Cheddar cheese, shredded Melts beautifully and adds richness.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the pork sausage in a skillet over medium heat until browned and fragrant.
  • In a large mixing bowl, combine the frozen hash brown potatoes, cooked sausage, chopped sweet onion, and diced red bell pepper. Stir until well mixed.
  • In a separate bowl, whisk the eggs and add a pinch of salt and pepper.
  • Pour the whisked eggs into the hash brown mixture and stir until evenly coated.
  • Fold in the shredded cheddar cheese.
  • Transfer the mixture to a greased 9x13 inch baking dish and spread it evenly.

Baking

  • Bake in the preheated oven for 45-50 minutes or until golden brown and cooked through.
  • Let the casserole cool for a few minutes before serving.

Notes

For extra flavor, consider adding chopped green onions or garlic powder. This casserole can be made ahead of time and can also be frozen.
