  • 4 large russet potatoes Choose uniform-sized potatoes for even cooking
  • 1 cup shredded cheese (Cheddar or your choice) Feel free to experiment with different cheeses
  • 1/2 cup sour cream For serving
  • 1/2 cup cooked bacon bits Can use store-bought or homemade
  • 1/4 cup chopped green onions Add extra for garnish if desired
  • Salt and pepper to taste Essential for enhancing flavors
  • Olive oil For brushing on the potatoes

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and slice the potatoes into thick slices, leaving the skins on.
  • Brush both sides of the potato slices with olive oil and sprinkle with salt and pepper.

Baking

  • Place the sliced potatoes on a baking sheet and bake for about 25-30 minutes, or until golden and crispy.
  • Remove from the oven and sprinkle cheese, bacon bits, and green onions on top.
  • Return to the oven for an additional 5-10 minutes, until the cheese is melted.

Serving

  • Serve warm with a dollop of sour cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven or microwave. Variations include adding vegetables like broccoli or spinach before baking.
