Ingredients
  

Main Ingredients

  • 4 pieces Flour tortillas For wrapping the filling
  • 2 cups Cooked steak, sliced or shredded Leftover steak can be used
  • 1 cup Shredded cheese (cheddar or Mexican blend) For topping the quesadillas
  • 1 cup Bell peppers, sliced Add color and flavor
  • 1 medium Onion, sliced For sautéing with other veggies
  • 1 teaspoon Spices (cumin, paprika, salt, pepper) Adjust spices to taste
  • 1 tablespoon Olive oil or cooking spray For sautéing veggies
  • as needed Sour cream, for serving Optional topping for serving
  • as needed Salsa, for serving Optional topping for serving

Instructions
 

Preparation

  • Heat a skillet over medium heat and add a little olive oil.
  • Sauté bell peppers and onions until softened.
  • Add the cooked steak and spices, stirring to combine.

Cooking

  • Place a flour tortilla in the skillet and top half with the steak mixture and shredded cheese.
  • Fold the tortilla over and cook until golden brown and the cheese has melted, about 3-4 minutes per side.
  • Remove from the skillet and repeat with remaining tortillas.

Serving

  • Serve hot with sour cream and salsa.

Notes

Let leftovers cool before storing in an airtight container in the fridge for about 2-3 days. Reheat in a skillet or microwave. Make sure your skillet is hot before adding tortillas for extra crispiness. Don't overload tortillas for easier folding.
