  • 1 cup Arborio rice The superstar in this recipe! It gives risotto its creamy texture and rich flavor.
  • 1/2 cup dry white wine A decent cooking wine will do.
  • 4 cups seafood or chicken broth Homemade is best but store-bought works fine. Keep it warm.
  • 1 cup cooked lobster meat, chopped Fresh lobster will make the dish shine, but frozen works too.
  • 1 count lemon, zested and juiced Brings a refreshing zing.
  • 1/4 cup grated Parmesan cheese Enhances the flavor of the risotto.
  • 2 tablespoons unsalted butter Adds richness.
  • 1 small onion, finely chopped Provides aromatic base.
  • 2 cloves garlic, minced Enhances overall flavor.
  • Salt and pepper to taste Essential for flavor enhancement.
  • Fresh parsley, chopped (for garnish) Adds color and flavor.

Instructions
 

Preparation

  • Warm your broth in a saucepan until it’s just simmering.
  • In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about five minutes.
  • Add minced garlic and Arborio rice, stir together and cook for 1-2 minutes until rice develops a hint of toast.
  • Pour in the dry white wine, stirring continuously until mostly absorbed.

Cooking

  • Start adding the warm broth, one ladle at a time, stirring frequently until each ladle is absorbed before adding the next.
  • Continue this process for about 18-20 minutes until the rice is creamy and has a perfect al dente bite.

Finishing Touches

  • Stir in the chopped lobster, lemon zest, lemon juice, and Parmesan cheese. Adjust seasoning with salt and pepper.
  • Remove from heat and garnish with fresh parsley before serving.

Notes

For perfect results, keep broth warm, stir regularly, and taste as you go to adjust seasoning. This risotto pairs nicely with a green salad and a light white wine.
