Preparation

  • Gather your ingredients and have them ready to go before you heat the pan.
  • Slice the zucchini, chop the onion, and mince the garlic.

Cooking

  • Heat a large skillet over medium heat and pour in the olive oil.
  • Add the chopped onions to the shimmering oil and sauté for 2-3 minutes until translucent.
  • Add sliced mushrooms and minced garlic. Cook until the mushrooms are tender, about 4-5 minutes.
  • Mix in the zucchini slices, oregano, and basil.
  • Sauté until the zucchini is tender but still slightly firm, about 5-7 minutes.
  • Season with salt and pepper to taste.
  • Serve warm to appreciate the flavors.

Notes

Use fresh vegetables for best flavor. Do not overcrowd the pan. Leftover sautéed zucchini can be stored in an airtight container in the fridge for about 3 days.
