  • 1 cup 1 cup heavy whipping cream Provides a light texture.
  • 2 tbsp 2 tbsp powdered sugar Adds a hint of sweetness.
  • 1 tsp 1 tsp vanilla extract Rounds out the flavors.

For garnish (optional)

  • Lemon slices or zest Enhances presentation.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter until it resembles wet sand.
  • Press the mixture into a 9-inch pie dish firmly.
  • Bake the crust for 8-10 minutes until lightly golden. Let it cool completely.
  • In a medium bowl, whisk together sweetened condensed milk, fresh lemon juice, lemon zest, egg yolks, and melted butter.
  • Pour the lemon filling into the cooled crust.
  • Bake the pie for 15-18 minutes until the filling is set but slightly jiggly in the center. Let it cool at room temperature, then refrigerate for at least 4 hours.
  • Whip the cream with powdered sugar and vanilla extract until stiff peaks form.
  • Spread or pipe the whipped cream over the pie and garnish with lemon slices or zest if desired.

Notes

Use fresh lemons for the best flavor. Store leftovers in the fridge covered with plastic wrap.
