Ingredients
  

Pasta and Dressing

  • 2 cups elbow macaroni Cook according to package instructions.
  • 1 cup mayonnaise Adjust to taste.
  • 2 tablespoons Dijon mustard Can be adjusted for flavor.

Vegetables

  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1/2 cup red onion, chopped
  • 1/4 cup sweet pickle relish

Seasoning

  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the elbow macaroni according to package instructions. Drain and let cool.
  • In a large bowl, combine the mayonnaise and Dijon mustard.
  • Add the cooled macaroni, celery, bell pepper, red onion, and sweet pickle relish to the bowl.
  • Mix until well combined, then season with salt and pepper to taste.
  • Chill in the refrigerator for at least an hour before serving.

Notes

Serve cold as a side dish with grilled meats or sandwiches. Garnish with additional chopped veggies or herbs. Best if eaten within three days, store in an airtight container.
