  • 2 cups elbow macaroni Cook according to package instructions.
  • 1 cup mayonnaise You can adjust this to taste.
  • 2 tablespoons dijon mustard Can be adjusted according to taste.
  • 1 cup chopped celery
  • 1 cup chopped bell pepper Any color bell pepper can be used.
  • 1/2 cup red onion, chopped
  • 1/4 cup sweet pickle relish Adjust according to taste.

Preparation

  • Cook the elbow macaroni according to package instructions. Drain and let cool.
  • In a large bowl, combine the mayonnaise and dijon mustard.
  • Add the cooled macaroni, celery, bell pepper, red onion, and sweet pickle relish to the bowl.
  • Mix until well combined, then season with salt and pepper to taste.
  • Chill in the refrigerator for at least an hour before serving.

Notes

To store leftover macaroni salad, place it in an airtight container and keep it in the refrigerator. It will stay fresh for about 3 to 5 days. Be sure to give it a good stir before serving it again, as the ingredients may separate. Feel free to add ingredients like diced pickles, hard-boiled eggs, or bacon for extra flavor. You can customize this salad with other vegetables like peas or carrots, and for a healthier version, substitute Greek yogurt for some or all of the mayonnaise.
