Ingredients
  

Pasta

  • 2 cups elbow macaroni

Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard

Vegetables

  • 1/4 cup diced celery
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper

Seasoning

  • Salt and pepper to taste

Preparation

  • Cook the elbow macaroni according to package instructions. Drain and let cool.
  • In a large bowl, combine the mayonnaise and Dijon mustard.
  • Add the cooled macaroni, celery, onion, and bell pepper to the bowl.
  • Mix until well combined.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for at least one hour before serving.

Notes

For a healthier option, use whole grain or gluten-free elbow macaroni. You can add diced pickles or relish for a tangier flavor, or chopped hard-boiled eggs for added protein. For crunch, consider adding diced radishes or peas. Macaroni salad can be made a day in advance and should be kept in the refrigerator until serving.
