  • 1/2 cup sugar

Wet Ingredients

  • 2 tablespoons butter, melted
  • 1 egg, beaten

  • Mandarin oranges, peeled and segmented
  • Cranberries (fresh or dried)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the self-rising flour and sugar.
  • Add the melted butter and beaten egg into the mixture.
  • Fold in the mandarin oranges and cranberries.
  • Pour the batter into a greased loaf pan.

Baking

  • Bake for 45-50 minutes or until a toothpick comes out clean.
  • Let it cool before slicing and serving.

Notes

You can enjoy this muffin bread plain or spread with a little butter. It also pairs nicely with a cup of tea or coffee.
