Ingredients
  

Dry Ingredients

  • 2 cups self-rising flour Make sure to measure correctly.
  • 1/2 cup sugar Adjust based on your sweetness preference.

Wet Ingredients

  • 2 tablespoons butter, melted
  • 1 egg, beaten

Fruits

  • 1 cup mandarin oranges, peeled and segmented
  • 1 cup cranberries (fresh or dried) If using frozen, do not thaw.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the self-rising flour and sugar.
  • Add the melted butter and beaten egg into the mixture.
  • Fold in the mandarin oranges and cranberries.

Baking

  • Pour the batter into a greased loaf pan.
  • Bake for 45-50 minutes or until a toothpick comes out clean.
  • Let it cool before slicing and serving.

Notes

Enjoy plain, with butter, or with a drizzle of honey or powdered sugar. Store in an airtight container for up to 3 days or freeze for up to 3 months.
