Ingredients
  

For the Salad

  • 4 cups Spring mix This is the perfect base for your salad.
  • 2 cups Mandarin oranges Fresh or canned (packed in juice).
  • 1 cup Toasted walnuts Chopped and toasted for flavor.
  • 1/2 cup Dried cranberries Adds a burst of tartness.
  • 1/2 cup Feta cheese Crumble on top for flavor.

For the Vinaigrette

  • 1/4 cup Orange juice Freshly squeezed is best.
  • 1/4 cup Olive oil Quality olive oil enhances the flavor.
  • 2 tablespoons Honey Adjust according to sweetness preference.
  • 1 teaspoon Dijon mustard Adds depth to the dressing.
  • 1 pinch Salt To taste.
  • 1 pinch Pepper To taste.

Instructions
 

Preparation

  • Wash your spring mix thoroughly and dry gently.
  • If using fresh mandarins, peel and separate the segments, removing any seeds.
  • Toast the walnuts in a small pan over medium heat for 5-7 minutes until golden and fragrant.

Assembly

  • In a large bowl, add the spring mix as the base.
  • Gently toss in the mandarin orange segments.
  • Sprinkle the toasted walnuts and dried cranberries for texture.
  • In a small bowl, whisk together the vinaigrette ingredients and adjust seasoning to taste.
  • Drizzle the vinaigrette over the salad and toss gently.
  • Crumble feta cheese on top before serving.
  • Serve immediately or chill in the fridge for a while.
  • Enjoy the salad!

Notes

Make the vinaigrette a day ahead for better flavor. Serve with grilled chicken or a warm loaf of bread.
