Ingredients

  • 3 medium cucumbers, peeled and sliced 1/4 inch thick Use fresh and ripe cucumbers for the best flavor.
  • 1 medium onion, sliced and separated into rings
  • 3 medium tomatoes, cut into wedges

Dressing

  • 1/2 cup vinegar Apple cider vinegar or red wine vinegar can be used for different flavors.
  • 1/4 cup sugar Adjust according to taste.
  • 1 cup water

Preparation

  • In a large bowl, combine the cucumbers, onions, and tomatoes.
  • In a separate bowl, mix together the vinegar, sugar, and water until the sugar is dissolved.
  • Pour the dressing over the vegetables and toss gently to combine.
  • Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

Serve this salad cold as a side dish or enjoy it on its own. It can be stored in an airtight container in the refrigerator for up to 3 days; the flavors may intensify as it sits.
