Ingredients
  

For the Muffins

  • 3 cups Leftover mashed potatoes Using leftover mashed potatoes enhances flavor.
  • 1 large egg Binds the mixture together.
  • 1 cup shredded cheddar cheese (divided) Substitute with any cheese of your preference.
  • 3 tablespoons chopped fresh chives (divided) Can replace with green onions or parsley.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Lightly grease a muffin tin with cooking spray or butter.
  • In a large bowl, combine the leftover mashed potatoes, egg, half of the shredded cheddar cheese, and half of the chopped chives. Stir until well incorporated.
  • Fill muffin cups about 3/4 full with the potato mixture.
  • Sprinkle the remaining cheddar cheese and chives on top of each muffin.

Baking

  • Place the muffin tin in the preheated oven and bake for about 20-25 minutes.
  • Remove from the oven and allow to cool for 5-10 minutes before gently removing the muffins from the tin.
  • Serve warm and enjoy!

Notes

Incorporate fresh herbs for added flavor. Can substitute cheeses as desired. Ensure not to overbake.
