Ingredients
  

For the Meatballs

  • 1 lb Ground beef
  • 1/4 cup Breadcrumbs
  • 1/4 cup Grated Parmesan cheese
  • 1 Egg
  • 2 cloves Garlic, minced
  • To taste Salt and pepper Season to preference

For the Soup

  • 1 small Onion, diced
  • 1 Carrot, diced
  • 2 stalks Celery, diced
  • 1 cup Green beans, trimmed and cut
  • 6 cups Beef broth Can substitute with chicken or vegetable broth
  • 1 cup Pasta (e.g., elbow macaroni) Use any pasta available
  • 1 tsp Italian seasoning
  • For sautéing Olive oil Use as needed for sautéing vegetables

Instructions
 

Preparation

  • In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, and minced garlic. Season with salt and pepper.
  • Mix well and form into small meatballs about the size of a golf ball.

Cooking

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery, sautéing for about 5 minutes until they start to soften.
  • Add meatballs to the pot and cook for about 5-7 minutes until browned on all sides.
  • Pour in beef broth and bring to a gentle boil.
  • Add green beans and pasta, sprinkling in Italian seasoning. Stir to combine.
  • Reduce heat and let simmer for 10-12 minutes until pasta is cooked through.
  • Taste the soup and adjust seasoning if necessary.

Serving

  • Ladle soup into bowls and enjoy with family.

Notes

For enhanced flavor, consider adding fresh herbs like rosemary. If using dried herbs, those work fine too. Serve with a side salad or crusty bread.
