Instructions

Preparation

  • In a large mixing bowl, combine the ground beef, breadcrumbs, egg, grated Parmesan, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined and shape into small meatballs, about one inch in diameter.

Browning the Meatballs

  • Heat the olive oil in a large skillet over medium heat and add the meatballs, browning them on all sides for about 5-7 minutes. Once browned, remove from skillet.

Sautéing the Vegetables

  • In the same skillet, add the diced onion, chopped carrots, and trimmed green beans. Sauté for about 5 minutes until slightly tender.
  • Sprinkle the flour over the vegetables and stir for another minute to coat evenly.

Building the Stew

  • Pour in the beef broth, add the tomato paste, and Worcestershire sauce. Stir until well combined. Add baby potatoes and meatballs back into the skillet.

Simmering

  • Cover the pot, lower the heat, and allow the stew to simmer for about 25-30 minutes until the vegetables are tender and the stew thickens.

Notes

For juicier meatballs, don't overwork the meat mixture. Adding fresh herbs like thyme or rosemary can elevate the flavor. A splash of red wine in the broth adds richness.
