Ingredients
  

Meatloaf Mixture

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion (finely chopped) About 1 cup
  • 1 tsp olive oil
  • 2 large eggs
  • 3 cloves garlic (minced)
  • 2 Tbsp ketchup
  • 3 Tbsp fresh parsley (finely chopped)
  • 3/4 cup Panko breadcrumbs (or gluten-free breadcrumbs)
  • 1/3 cup milk
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper

Sauce

  • 3/4 cup ketchup
  • 1 1/2 tsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions
 

Preparation

  • Line a rimmed baking sheet with parchment paper or foil and preheat the oven to 350°F.
  • In a medium skillet, heat 1 tsp of olive oil over medium heat. Add the chopped onion and sauté until softened and golden, about 5-7 minutes. Transfer to a plate to cool.

Cooking

  • In a large bowl, mix all meatloaf ingredients just until combined, using your hands for best results.
  • Shape the mixture into a loaf and place on the baking pan. Bake uncovered at 350°F for 40 minutes.
  • In a small bowl, stir to combine the sauce ingredients.
  • Spread the sauce over the meatloaf and return to the oven for an additional 20 minutes or until the internal temperature reaches 160°F.
  • Let the meatloaf rest for 10-15 minutes before slicing.

Notes

Use fresh ingredients for best flavor. Don't overmix to maintain tenderness. Check internal temperature with a thermometer.
