  • 1 cup long-grain white rice Rinse before cooking to remove excess starch.
  • 2 tbsp vegetable oil
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth Can be substituted with vegetable broth for a vegetarian option.
  • 1/2 cup tomato sauce
  • 1/2 tsp ground cumin
  • to taste Salt
  • Fresh cilantro for garnish Adds flavor and color.

Cooking

  • Heat oil in a medium saucepan over medium heat.
  • Add the rice and stir constantly until it turns golden brown, about 5 to 7 minutes.
  • Stir in the onion and garlic, cooking until soft.
  • Add the tomato sauce, chicken broth, cumin, and a pinch of salt to the pan.
  • Bring the mixture to a boil, then cover and let it simmer on low heat for 18 to 20 minutes.
  • Once done, fluff the rice with a fork, garnish with fresh cilantro, and serve.

Notes

For extra kick, add chopped jalapeños or bell peppers. For a vibrant dish, consider adding peas and diced carrots during cooking. Experiment with different spices like paprika or chili powder.
