Ingredients
  

Main Ingredients

  • 1 15-ounce bag Seasoned Waffle Cut Fries Frozen
  • 1 large head romaine, finely chopped
  • 3 pieces Persian cucumbers, finely chopped
  • 1/2 small cabbage, finely chopped
  • 3 sticks celery, finely chopped
  • 3 pieces green onions, finely chopped
  • 1/4 cup basil leaves, finely chopped
  • 1/4 cup parsley, finely chopped

Dressing

  • 1 piece lime, juiced
  • 1/3 cup full fat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup olive oil

Instructions
 

Cooking Fries

  • Preheat the air fryer to 360°F.
  • Fill the air fryer basket with no more than half full of your frozen waffle fries.
  • Cook for 11-12 minutes or until crispy to your liking.

Preparing Salad

  • Meanwhile, place the romaine, cucumbers, cabbage, celery, green onions, basil, and parsley into a large salad bowl.
  • Add the yogurt, mustard, salt, pepper, and olive oil to the bowl.
  • Toss everything together to combine well.

Serving

  • Serve the Microchop Salad in a large bowl or on individual plates.
  • Add a generous portion of crispy waffle cut fries on the side or on top of the salad.
  • Drizzle additional lime juice or olive oil over it, or sprinkle some cheese if you like.

Notes

Make sure to chop all the vegetables finely for better mixing. You can customize with additional veggies, nuts, or seeds. Adjust dressing ingredients to taste.
