Ingredients
  

Vegetable Base

  • 2 cups zucchini, diced Adds texture and absorbs flavors.

  • 2 cups fresh spinach Adds nutrients and color.

Liquid Ingredients

  • 4 cups vegetable broth Use good quality broth.
  • 1 can (14.5 oz) diced tomatoes For flavor and color.

Seasoning and Protein

  • 2 teaspoons Italian seasoning Authentic flavor.
  • 1 can (15 oz) cannellini beans, drained Adds protein.
  • 1 cup small pasta shapes Ditalini or macaroni are good options.
  • 2 tablespoons olive oil For sautéing vegetables.
  • to taste salt and pepper Adjust to preference.

Instructions
 

Preparation

  • Gather your ingredients: Wash, chop, and prepare all vegetables.
  • Heat 2 tablespoons of olive oil in a large pot over medium heat.

Cooking

  • Add 4 cloves of minced garlic, 2 cups of diced celery, and optionally, 2 cups of diced onions. Sauté for 3-4 minutes until the onions are translucent.
  • Stir in 2 cups of chopped carrots and 2 cups of diced zucchini; cook for another 5 minutes.
  • Pour in 4 cups of vegetable broth and 1 can of diced tomatoes. Stir and bring to a gentle boil.
  • Add 2 teaspoons of Italian seasoning, along with salt and pepper to taste. Mix well.
  • Add 1 can of drained cannellini beans and 1 cup of small pasta shapes. Reduce heat to a simmer for 10-12 minutes, until the pasta is tender.
  • Just before serving, add 2 cups of fresh spinach and let it wilt for about a minute.

Final Touch

  • Taste the minestrone and adjust seasoning if needed. Serve hot.

Notes

Use fresh produce for better taste and can add leftover vegetables for variety. Enjoy with crusty bread or garlic bread.
