Ingredients
  

For the pie crust and filling

  • 2 pieces ready-made pie crusts Store-bought pie crusts for convenience.
  • 3 cups diced Granny Smith apples (about 4 apples) Feel free to mix with other apple varieties for flavor.
  • 0.25 cup white sugar Adjust sugar to taste.
  • 1 teaspoon cinnamon Can substitute or add other spices.
  • 1 tablespoon lemon juice For flavor enhancement.
  • 1 tablespoon butter Dot on top of the pies before baking.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a bowl, mix the diced apples with sugar, cinnamon, and lemon juice.
  • Roll out the pie crusts and cut them into small circles.
  • Place the apple filling in the center of each circle and fold the crust over to create a mini pie shape.

Baking

  • Place the pies on a baking sheet, dot with butter, and bake for 15-20 minutes or until golden brown.
  • Allow to cool slightly before serving.

Notes

Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream. Store in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. For a shiny crust, brush with egg wash before baking.
