Ingredients
  

For the crust

  • 2 tablespoons granulated sugar Adds sweetness to the crust.

For the filling

  • 16 ounces cream cheese, softened Main ingredient for a creamy texture.
  • 1/2 cup granulated sugar Sweetens the filling.
  • 2 large eggs Help set the filling.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1/4 cup sour cream Adds tanginess.

For the topping

  • Pineapple slices (fresh or canned) Freshness and brightness.
  • 1/2 cup caramel sauce For drizzling.
  • 2 tablespoons chopped pistachios (optional) Adds crunch and color.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.
  • Press this mixture into the bottoms of a lined muffin tin.
  • Bake for about 5 minutes and allow to cool.

Make the Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese and sugar together until smooth.
  • Add the eggs one at a time, mixing thoroughly after each addition.
  • Stir in the vanilla extract and sour cream until combined.

Fill and Bake

  • Divide the filling evenly among the muffin cups.
  • Bake for about 18-20 minutes until the centers just set. Let them cool before chilling in the refrigerator for at least two hours.

Add Toppings

  • Top each cheesecake with a pineapple slice, drizzle with caramel sauce, and sprinkle with chopped pistachios.

Serve

  • Gently remove cheesecakes from the muffin tin and serve on a plate.

Notes

For best results, use room temperature cream cheese. These can be made in advance and stored in the fridge for better flavor development.
