Preparation

  • Preheat your oven to 425°F (220°C).
  • Butter and lightly flour four 6-ounce ramekins.

Making the Batter

  • Melt the chopped dark chocolate and butter together in a double boiler or microwave until smooth.
  • In a separate bowl, whisk together the eggs, granulated sugar, and vanilla extract.
  • Fold the chocolate mixture into the egg mixture until just combined.
  • Gently stir in the flour and salt until fully incorporated.

Baking

  • Divide the batter among the prepared ramekins, filling each about 3/4 full.
  • Bake for 12-14 minutes until the edges are firm and centers are soft.
  • Let them rest for about 1 minute, then run a knife around the edges to loosen.
  • Invert onto serving plates and dust with powdered sugar. Add fresh fruit or ice cream on top.

Notes

Chill the ramekins before filling for a contrasting temperature. You can experiment with different types of chocolate for unique flavors. Adding a pinch of espresso powder elevates the chocolate without the taste of coffee.
