Preparation

  • In a bowl, mix soy sauce, brown sugar, cornstarch, garlic, and ginger to create a marinade.
  • Add the sliced chicken to the marinade and let it sit for 15 minutes.

Cooking

  • Heat vegetable oil in a pan over medium-high heat.
  • Stir-fry the marinated chicken until cooked through, about 5-7 minutes.
  • Add the chopped green onions and stir-fry for an additional 2-3 minutes.
  • Season with salt and pepper to taste.
  • Serve hot over rice.

Notes

Store leftover Mongolian Chicken in an airtight container in the refrigerator for up to 3 days, or freeze for 2-3 months. Thaw in the fridge overnight before reheating.
