Ingredients
  

Main Ingredients

  • 1 pound Chicken breast, sliced into thin strips Easier to cut when slightly frozen.
  • 2 cups Cabbage, shredded Fresh and colorful for better presentation.
  • 1 cup Mushrooms, sliced
  • 2 Eggs, beaten Use a fork for fluffiness when cooked.
  • 3 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 2 tablespoons Vegetable oil For stir-frying.
  • Flour tortillas, Chinese pancakes, or rice, for serving Tortillas work well for wrapping.

Instructions
 

Preparation

  • Slice 1 pound of chicken breast into thin strips.
  • In a bowl, combine 3 tablespoons of soy sauce, 2 tablespoons of hoisin sauce, 2 minced cloves of garlic, and 1 teaspoon of minced ginger. Place the chicken strips in the mixture and marinate for at least 30 minutes.
  • Shred 2 cups of cabbage and slice 1 cup of mushrooms.
  • Beat 2 eggs in a small bowl until well mixed.

Cooking

  • Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
  • Add the marinated chicken strips and stir-fry for about 5-7 minutes until cooked through and slightly browned.
  • Add the shredded cabbage and sliced mushrooms to the skillet. Stir and cook for another 3-4 minutes until the vegetables are tender yet crisp.
  • Push the chicken and vegetables to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked. Mix everything together.
  • Serve with warm flour tortillas, Chinese pancakes, or rice.

Notes

Use fresh ingredients for enhanced flavor. Optional: add red pepper flakes or sriracha for heat. Store leftovers in an airtight container for 3-4 days; best reheated on the stove.
