Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

Mix Dry Ingredients

  • In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg.

Mix Wet Ingredients

  • In another bowl, mix together the brown sugar, granulated sugar, and vegetable oil until well-blended. Add the eggs and vanilla extract, stirring until smooth.

Add Mix-Ins

  • Fold in the grated carrots, raisins, walnuts, and shredded coconut into the wet mixture.

Combine Mixtures

  • Slowly fold the wet ingredients into the dry ingredients until just combined.

Fill Muffin Cups
