Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Wet Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract

Mix-Ins

  • 1 cup grated carrots
  • 1/2 cup shredded coconut
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • 1 cup crushed pineapple, drained

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, beat the eggs. Add the vegetable oil, brown sugar, and vanilla extract, and mix until well combined.
  • Stir in the grated carrots, coconut, raisins, nuts, and pineapple into the wet ingredients.
  • Combine the dry ingredients with the wet ingredients until just mixed. Avoid over-mixing.

Baking

  • Fill each muffin cup about 3/4 full with the batter.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool on a wire rack before serving.

Notes

Morning Glory Muffins are best served warm or at room temperature. You can enjoy them straight from the oven or allow them to cool before serving. They pair wonderfully with coffee or tea. For an extra treat, spread a little butter or cream cheese on top. Store leftovers in an airtight container at room temperature for a couple of days or in the refrigerator for up to a week. They can also be frozen for up to three months.
