  • 1 lb Beef, cut into chunks Chuck roast recommended for best flavor.
  • 2 cups Potatoes, diced
  • 1 cup Corn, frozen or canned
  • 1 cup Carrots, sliced
  • 1 cup Beans, canned or cooked
  • 1 cup Peas, frozen
  • 4 cups Beef broth
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika

Cooking Steps

  • Preheat your pot on medium heat.
  • Add 2 tablespoons of olive oil to the pot. Once shimmering, add the chopped onion and minced garlic.
  • Add the beef chunks and brown them on all sides.
  • Stir in the diced potatoes, corn, carrots, beans, and peas.
  • Pour in the beef broth, ensuring all ingredients are well-covered.
  • Season with salt, black pepper, dried thyme, and paprika. Stir gently.
  • Turn up the heat to bring the mixture to a gentle boil.
  • Reduce heat to low, cover, and let it simmer for 1 to 1.5 hours.
  • Taste and adjust seasoning as necessary before serving.

Notes

Serve with crusty bread or fresh biscuits to soak up the gravy. Leftovers can be stored in an airtight container for 3 to 4 days.
