Ingredients
  

Main Ingredients

  • 2 pounds Beef chuck roast, cut into cubes
  • 2 medium Onions, chopped
  • 3 large Carrots, sliced
  • 4 medium Potatoes, diced
  • 3 cloves Garlic, minced
  • 6 cups Beef broth
  • 2 tablespoons Tomato paste
  • 2 leaves Bay leaves
  • 1 teaspoon Fresh thyme
  • Salt and pepper, to taste
  • 2 tablespoons Olive oil

Preparation

  • Gather your ingredients: chop the onions, slice the carrots, and dice the potatoes.

Browning the Meat

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches and brown them nicely on all sides for 5-7 minutes. Remove the beef and set aside.

Sautéing Vegetables

  • In the same pot, add the chopped onions and sauté until soft and translucent, about 4 minutes. Then add minced garlic and stir for an additional minute.

Adding Carrots and Potatoes

  • Stir in the carrots and potatoes, allowing them to mingle with the onions and garlic for a couple of minutes.

Combining Ingredients

  • Add the browned beef back to the pot along with any accumulated juices.

Adding Broth

  • Slowly pour in the beef broth and scrape the bottom of the pot to capture all the browned bits.

Incorporating Tomato Paste and Herbs

  • Mix in the tomato paste, bay leaves, and thyme, stirring until well blended.

Simmering

  • Increase the heat to bring the stew to a gentle boil. Once boiling, reduce heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, until the beef is fork-tender.

Final Seasoning

  • Taste the stew and adjust seasoning with salt and pepper as needed.

Serving

  • Serve the Mulligan Stew warm in big bowls, garnished with fresh herbs if desired.

Notes

For variations, feel free to add other vegetables like peas or green beans. Store leftovers in an airtight container in the fridge; they taste even better the next day.
