Preparation

  • Gather all your ingredients to streamline the cooking process.
  • In a pot, bring 2 cups of chicken broth to a boil. Slowly add in 1 cup of grits while stirring continuously to avoid lumps. Cover and reduce heat, letting them simmer for about 20-25 minutes.
  • Once thick and creamy, stir in 1 cup of shredded cheddar cheese until melted. Season to taste with salt.
  • In a separate skillet, cook the 4 slices of chopped bacon over medium heat until crispy. Remove and set aside on paper towels.
  • In the same skillet, add the diced red bell pepper and sauté until softened (about 3-4 minutes).
  • Add the minced garlic and shrimp to the skillet, sprinkle with Cajun seasoning, salt, and pepper. Cook until the shrimp are pink and opaque (3-5 minutes).
  • To serve, place a generous helping of grits on each plate, top with shrimp mixture, crispy bacon, and chopped green onions.
