Ingredients
  

For the Cookies

  • 1 cup Cream cheese, softened Use full-fat for best flavor.
  • 1/2 cup Granulated sugar
  • 1/4 cup Brown sugar
  • 1/2 cup Unsalted butter, softened Use room temperature for a smooth batter.
  • 1 tsp Vanilla extract
  • 1 Large egg
  • 1 1/2 cups All-purpose flour
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup White chocolate chips (optional) Substitute with semi-sweet chocolate if desired.

For Topping (optional)

  • Graham cracker crumbs Sprinkle for that cheesecake crust flavor.
  • Extra white chocolate for drizzling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine cream cheese, granulated sugar, brown sugar, and softened unsalted butter. Beat until smooth and creamy.
  • Add in the egg and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet mixture in three parts, mixing gently after each addition.
  • Fold in the white chocolate chips gently.
  • Line your baking sheet with parchment paper.

Baking

  • Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for about 10-12 minutes until the edges are slightly golden.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack.
  • Optional: Drizzle melted white chocolate over the cooled cookies and sprinkle with graham cracker crumbs.

Notes

For best results, ensure all ingredients are at room temperature and do not overmix the dough. Chill the dough if baking in a warm kitchen to make it easier to handle.
