Ingredients
  

For the crust

  • 1 cup 1 cup sugar Essential for balancing the cream cheese.
  • 1 teaspoon 1 teaspoon vanilla extract Adds a lovely depth of flavor.
  • 3 large 3 large eggs Helps to set the cheesecake.
  • 1 cup 1 cup sour cream This is the secret ingredient for extra creaminess!
  • 1 tablespoon 1 tablespoon lemon juice Just a hint of tanginess that brightens the flavor.

For the topping

  • 1 cup 1 cup cherry pie filling or fresh cherries This delicious topping brings everything together.

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then let it cool.
  • In another bowl, beat the softened cream cheese until it’s super smooth.
  • Gradually add the sugar and vanilla extract, mixing well until everything is combined.
  • Add the eggs one at a time, mixing on low speed after each addition.
  • Add the sour cream and lemon juice, stirring to combine.
  • Pour the filling into the cooled crust, smoothing the top with a spatula.

Baking and Chilling

  • Bake for about 50-60 minutes, until set but still slightly jiggly in the center.
  • Turn off the oven and crack the door open, allowing the cheesecake to cool gradually.
  • Refrigerate for at least 4 hours before serving.
  • Top with cherry pie filling or fresh cherries before serving.

Notes

For a crispier crust, try toasting the graham cracker crumbs in the oven for a few minutes. Allow your cream cheese to sit at room temperature before mixing for easier blending.
