Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar

For the filling

  • 1 8 oz cream cheese, softened Make sure it's fully softened for a smooth filling.
  • 1 14 oz sweetened condensed milk
  • 1/4 cup lemon juice Can substitute lime juice for a different flavor.
  • 1 20 oz crushed pineapple, drained
  • 1 cup shredded coconut Feel free to add more for extra texture.

Preparation

  • Mix the graham cracker crumbs, melted butter, and sugar together in a bowl.
  • Press this mixture into the bottom of a 9x9 dish to form the crust.
  • In another bowl, beat the softened cream cheese until smooth.
  • Add the sweetened condensed milk and lemon juice, and mix until fully combined.
  • Gently fold in the drained crushed pineapple and shredded coconut into the cream cheese mixture.
  • Spread this filling over the crust in the dish.
  • Refrigerate the bars for at least 4 hours until they are firm.
  • Once set, cut into bars and garnish with pineapple chunks if desired.

Notes

These bars are best served cold. They can be stored covered in the refrigerator for about 5 days. Use an airtight container to prevent them from drying out.
