Ingredients
  

Wet Ingredients

  • 1 cup Peanut butter Use creamy or chunky as preferred.
  • 1 cup Brown sugar Packed.
  • 1/2 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Dry Ingredients

  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt

Mix-ins

  • 1 cup Chopped peanuts Feel free to substitute with chocolate chips or add cinnamon.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar until smooth.
  • Add the eggs and vanilla extract, and beat until fully combined.
  • In another bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt.
  • Slowly add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Fold in the chopped peanuts.
  • Scoop spoonfuls of dough onto a lined baking sheet, giving them space to spread.

Baking

  • Bake the cookies in the preheated oven for about 10 to 12 minutes, until the edges are golden brown.
  • Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra peanut butter flavor, add more peanut butter. Allow cookies to cool on the sheet for best results.
