  • 2 cups Old-fashioned oats Gives cookies their heartiness.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the flour, baking soda, and salt.
  • In a separate bowl, cream together peanut butter, brown sugar, and granulated sugar until smooth.
  • Add eggs and vanilla to the peanut butter mixture and mix well.
  • Gradually incorporate the dry ingredients into the wet mixture.
  • Fold in the oats gently.
  • Using a cookie scoop, drop heaping spoonfuls of dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes, or until the edges are golden and the centers are still soft.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For chewier cookies, consider chilling the dough for 30 minutes before baking. You can also add chocolate chips for a fun variation.
