Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the peanut butter and unsalted butter until smooth.
  • Add the brown sugar and granulated sugar and beat until fluffy for about 2-3 minutes.
  • Incorporate the eggs, one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the butter mixture until combined.
  • Stir in the old-fashioned oats and chopped peanuts.
  • Drop tablespoonfuls of dough onto ungreased baking sheets, leaving some space between each.

Baking

  • Bake for about 10-12 minutes or until edges are golden.
  • Let cool on baking sheets for a few minutes before transferring to wire racks.

Notes

For a variation, consider adding chocolate chips or a pinch of cinnamon. If you prefer, chill the dough for 30 minutes before baking to improve texture.
