Ingredients
  

Main Ingredients

  • 1 pound okra, trimmed and sliced diagonally
  • 4 large eggs, lightly beaten
  • 2 tablespoons cooking oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional Seasonings

  • 1 tablespoon soy sauce For added flavor
  • 1 teaspoon sesame oil For aroma
  • 1 clove garlic, minced Optional
  • 1/2 teaspoon turmeric For color and flavor

Instructions
 

Preparation

  • Wash and trim the okra. Slice it diagonally into 1/2-inch thick pieces.

Scrambling Eggs

  • Heat 1 tablespoon of oil in a wok or large skillet over medium heat. Add the beaten eggs and scramble until cooked through but still slightly moist. Remove from the wok and set aside.

Stir-frying Okra

  • Add the remaining 1 tablespoon of oil to the wok. Add the minced garlic (if using) and stir-fry for about 30 seconds until fragrant.
  • Add the okra and stir-fry for 3-5 minutes until slightly tender-crisp.

Combining Ingredients

  • Add the scrambled eggs back to the wok. Season with salt, pepper, soy sauce (if using), sesame oil (if using), and turmeric (if using). Stir-fry for another 2-3 minutes to combine everything and heat through.

Serving

  • Serve hot as a side dish or main course.

Notes

This dish can be enjoyed on its own or served over a bed of steamed rice or quinoa. It pairs well with grilled meats, fish, or a fresh salad. Garnish with fresh herbs for added flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
