  • 1/2 cup melted butter
  • 1 cup self-rising flour Can substitute with all-purpose flour plus 1 1/2 teaspoons of baking powder.
  • 1 1/2 cups sugar
  • 1 cup milk
  • 1/2 tsp vanilla
  • 3 cups blackberries (fresh or frozen) If using frozen, thaw and drain excess juice.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine melted butter, sugar, and vanilla. Mix well.
  • Add the milk and stir until smooth.
  • Gently mix in the self-rising flour just until combined (do not overmix).
  • Pour the batter into a greased baking dish.
  • Evenly distribute the blackberries over the top of the batter.
  • Bake for 45-50 minutes or until the cobbler is golden brown and bubbly.
  • Let it cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. For storage, keep in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven as needed. A pinch of cinnamon or nutmeg can enhance the flavor.
