  • 1 lb Ground Beef Opt for quality beef, preferably 80/20 for the best flavor.
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Diced Tomatoes
  • 1 can (15 oz) Tomato Sauce
  • 2 cups Elbow Macaroni Can substitute with fusilli or shells if preferred.
  • 2 cups Beef Broth
  • 1 tsp Italian Seasoning
  • To taste Salt and Pepper Season to personal preference.
  • 1 cup Shredded Cheddar Cheese (optional) Adds creaminess if desired.

Preparation

  • In a large pot over medium heat, add ground beef. Cook until browned, about 5 to 7 minutes, breaking apart with a spatula.
  • Drain any excess fat, then add chopped onion and minced garlic. Sauté for 3 to 4 minutes until onion is soft.
  • Pour in diced tomatoes and tomato sauce, stirring to combine with beef and veggies.
  • Add beef broth and bring to a gentle simmer. Adjust seasoning with salt and pepper as necessary.
  • Sprinkle in Italian seasoning and mix well.
  • Add elbow macaroni, ensuring that it's submerged in the sauce.
  • Simmer uncovered for 12-15 minutes, stirring occasionally until the macaroni is cooked.
  • Fold in shredded cheddar cheese if using, stirring until melted.
  • Serve goulash in bowls, optionally with crusty bread and a simple side salad.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Can also freeze for up to 3 months. Reheat gently to enjoy.
