Ingredients
  

For the Pie

  • 1 9-inch unbaked pie crust
  • 4 cups fresh rhubarb, chopped
  • 1 large egg
  • 1.5 cups sugar
  • 1 cup sour cream

Preparation

  • Preheat the oven to 350°F (175°C).
  • Line a pie dish with the unbaked pie crust.
  • In a mixing bowl, combine the chopped rhubarb, sugar, and sour cream.
  • Pour the rhubarb mixture into the pie crust.
  • Beat the egg and brush it over the edges of the pie crust for a golden finish.

Baking

  • Bake in the preheated oven for 45-50 minutes, or until the filling is bubbling and the crust is golden.
  • Allow to cool before serving.

Notes

For best flavor, use fresh rhubarb. If unavailable, frozen rhubarb can be used if thawed and drained. Adjust sugar to taste for a tarter pie, and brush the egg over the crust for a golden color. Cool completely before slicing to help it set.
