  • 1 tablespoon unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 pounds skinless boneless chicken breasts, cut into cubes
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup uncooked orzo
  • 1 cup 2% milk
  • 2 cups water
  • 1 cup baby spinach
  • 0.25 cup torn fresh basil

Instructions
 

Preparation

  • Melt the butter in a large skillet over medium heat.
  • Whisk in flour until fully incorporated and cook, stirring occasionally, until it lightly bubbles.
  • Add the chicken, garlic powder, oregano, thyme, salt, and pepper, and stir to combine.

Cooking

  • Add the uncooked orzo, then pour milk and water on top.
  • Bring the mixture to a boil, then decrease heat to a simmer.
  • Cover and cook for 20 minutes, until the orzo is cooked through and the chicken is tender, stirring occasionally to prevent sticking.
  • Remove from heat, uncover, add spinach and basil, and stir until wilted into the sauce.

Notes

Best served warm right from the pan. Pairs well with green salad or garlic bread. Sprinkle extra fresh basil on top for added flavor.
