Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and diced onion, cooking until the beef is browned and the onion is softened, about 5 to 7 minutes.
  • Drain any excess fat.
  • Stir in beef broth, milk, ranch seasoning, and pasta; mix well.
  • Bring the mixture to a boil over high heat.
  • Reduce heat to a simmer, cover the pot, and cook for about 10 to 12 minutes, stirring occasionally.
  • Check the pasta towards the end of the cooking time for tenderness.
  • Remove pot from heat and stir in shredded cheddar cheese until it melts.
  • Season with salt and pepper to taste.
  • Serve hot.

Notes

For variations, you can add fresh veggies like spinach or bell peppers for added nutrients. If you have leftovers, store in an airtight container in the fridge for 3 to 4 days. Reheat on the stove over medium heat, adding a splash of milk to restore creaminess.
